Ingredients

  • 2 tablespoon vegetable oil 
  • ½ medium onion diced
  • 1 garlic clove minced
  • 1 large tomato diced
  • 2 green onions chopped
  • ¼ teaspoon curry powder
  • 2 teaspoons Paprika
  • 2 cups cooked corn
  • 4 cups cooked beans 
  • 1 ½ cups water
  • Salt and pepper to taste
  • 2 tablespoons chopped cilantro

Instructions

  1. In a large skillet, add the oil, both types of onions, and garlic, and sauté, for about 2-3 minutes, stirring constantly to prevent burning. Add tomatoes, curry powder, paprika, corn, drained beans, and salt and pepper.

  2. Then pour water, bring to a boil, and let it simmer for 15-20 minutes, stirring occasionally.

  3. When most of the water is evaporated, it's done. Throw cilantro on top and serve warm.
